Mardi Gras is a few weeks away and I am already gearing up for a bowl of homemade Jambalaya! Yesterday was my Parish's annual Mardi Gras fundraiser and my Godmother was in charge if running the RICA Cake Walk so I was happy to help by donating a few cakes! I wanted the cakes to be fun and stand out among the other cakes. I decided to make two cakes with the traditional Mardi Gras colors: Purple, Green and Gold. I used food color to dye the vanilla cake batter and created a marble batter in the pans. I also divided my batch of frosting into the same three colors. To create the round I piped on each color in sections and when I used my spatula to smooth out the frosting it created the rainbow effect. To create the swirled colors on the cupcakes I placed all three piping bags into a fourth piping bag with a large tip and slowly squeezed the three colors to come from the fourth bag. I slowly pipped the three colors, starting from the bottom and finished at the top of the cupcake. were super easy and fast to go, and they defiantly stood out on the cake table!
