Ingredients
2 cups Flour
3/4 cup Sugar
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
3/4 tsp Salt
1/4 cup Butter, Soften
3/4 cup Orange Juice
1 tbsp Grated Orange Zest
1 Egg
1 cup Chopped Cranberries
1/2 cup Chopped Walnuts or Pecans (Optional)
Glaze
1 1/2 cups Powdered Sugar
3 tsp Milk
1/8 tsp Salt
1/4 tsp Vanilla Extract
2 tsp Melted Butter
Directions
- Preheat oven to 350 and spray a bundt pan with baking spray or grease and flour.
- Combine flour, sugar, baking powder, baking soda, and salt in a bowl. Stir the sliced soften butter into the dry mixture until combined. Add the orange juice, orange zest, and beaten egg and mix well. Fold in the cranberries and if desired walnuts or pecans. Spoon batter into the prepared pan.
- Bake for 1 hours or until a toothpick comes out clean. Cool in the pan for 10 minutes before adding glaze and serving.
