New Closet System

I am currently seven months pregnant and the process of turning my beautiful office/guest room into a nursery has begun. Phase one was removing all of my extra clothes, craft, and project storage tubs and all of the other miscellanies things that have been tossed in there from the closet. I'll go into purging of the storage tubs in another post so I can focus on my extra closes that didn't fit into my closest in the master bedroom. My side of the closet only had one bar to hand all of my clothes on and it was starting to bend because of all of the weight. What can I say, I have a LOT of clothes and I love to shop! 

To make my closet a little more function we decided to get a premade closet organization system from here. However, because of how our closets are and how the kit was, we had to put it together in a different way than the instructions given. We moved the drawers over more and build an area for my dresses behind the section of the wall between the two closets. Then on the other side, we created four sections to hand clothes, with one section having a shelf. We also kept the original closet shelf to place on top for shoe storage. We also reused the old cubby selves to put additional shoes (I also have a LOT of shoes), belts and scarves inside cubby bins. I used the drawers to store some clutches, purses, along with some sweaters and cardigans. The bottom shelf was the perfect display for my Great Aunt's antique jewelry box. While I used the other shelf to display my favorite perfumes and smaller jewelry boxes, along with a wall mounted jewelry organizer I bought to display all of my beautiful repli-Kate jewelry on.

I am so happy with how this project came out and ready to move on to the next project as we get closer to our little bundle of joys arrival!

Slow Cooker ​Cabbage Roll Soup

Yesterday was my late father’s birthday. It is the first birthday without him and also being 6 months pregnant it has been very emotional for me. In honor of his birthday I decided to make his favorite meal Cabbage Rolls, but with a twist. I made it into a soup. It was a lot easier than the original recipe and just as delicious!

Ingredients:
  • 2 lb ground beef
  • 1 onion, chopped
  • 1 small head of cabbage, chopped
  • 1/2 bell pepper, chopped
  • 1/2 cup apple cider vinegar
  • 1 8oz can tomato sauce
  • 4 cups beef broth
  • 1 cup minute rice, uncooked
  • salt and pepper to taste
Directions:
  1. Cook ground beef until done and place in the slow cooker.
  2. Place in all the onions, beef stock, apple cider vinegar and tomato sauce, cook on low for 6 hours
  3. Add the chopped cabbage, cook on low for 1-2 hours, until tender
  4. In the last 15-20 minutes, add the rice and it'll cook on it's own. Check after 10 minutes and then every few minutes until fully cooked.
  5. Enjoy!

One Pan Chicken & Veggies

Need a fast and healthy dinner? Then this one is perfect! Feel Free to change the veggies to your preference. ​

Ingredients:
  3 chicken breasts
  1 1/2 cups bell pepper (I used red, yellow, and green)
  1/2 onion
  2 zucchini
  2 cups broccoli florets (I used frozen)
  2 tablespoons olive oil
  1/2 teaspoon salt
  1/2 teaspoon black pepper
  1 teaspoon Italian seasoning
  1/2 teaspoon paprika

Directions:
  • Preheat oven to 450 degrees
  • Chop all the veggies into large pieces. Cut the chicken into cubes using another cutting board.
  • Place the chicken and veggies in a medium sheet pan.
  • Add the olive oil, salt and pepper, Italian seasoning, and paprika.
  • Bake for 20 minutes or until the veggies and chicken is cooked.

Enjoy as is or eat with rice or salad.
