Every Father's Day I make my dad's FAVORITE meal, Cabbage Rolls. They remind me of special events as a kid when my step-mom would make them for us. I always looked forward to birthday and holidays because her cabbage rolls were so yummy! After years of craving them and no way of getting her recipe I started experimenting and finally came up with a recipe that I think is even better than I remembered as a kid. I hope you find this as yummy as we do!
Cabbage Rolls Ingredients: 2 heads of Green cabbage 1 1/2 cup cooked rice
Sauce 1 large or 2 small cans of tomato paste 1/2 cup apple cider vinegar 1/4 cup brown sugar 1 tsp salt 1/4 tsp pepper
Preheat oven at 350. Bring pot of water to a boil and put in whole head of cabbage. Simmer for five minutes or leaves are pliable. Make a small meat loaf shape, about the size of your palm, and place it inside one cabbage leaf. Add a spoon full of cooked rice and top with a soup full of sauce. Roll the cabbage around the filling, tucking in the ends. Place seam side down in baking dish. After all cabbage leaves have been stuffed and placed, pour the remaining sauce over the rolls. Cover with foil and cook at 350 degrees for 1 hour.
