3 pounds corned beef brisket with spice packet
10 small red potatoes cut into quarters
1 lb bag of baby carrots
1 large head cabbage, cut into small wedges
- Place corned beef in slower cooker or roaster and cover with water. Add the spice packet that came with the corned beef. Cover and cook for 4 hours on high or 8 hours on low.
- With 3 hours to go on low or 1 hour on high, add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 30 more minutes. Shredded beef and serve in a bowl.
